Peach and Fig Asiago Flatbreads

So…found these new flatbreads at Publix Supermarket a few weeks ago.   and made a flatbread to try to match the taste of an appetizer my husband and I had at The Front Porch in Ogunquit Maine on vacation.  It came out great!  So I’ve been playing around with it and I want to share it with you.


Two flatbreads (picture)

Three medium sweet onions

3 TBSP Butter

1/4 cup balsamic vinegar

3TBSP Brown Sugar

1 tsp kosher Salt

4 oz plain goat cheese

4 oz goat cheese with honey

4 oz Asiago cheese crumbled

8 fresh figs (any ripe fig will do)

2 large ripe peaches



Melt three TBSP butter in a pan.  Add three thinly sliced onions.  Cover and saute five minutes until soft.  Take the cover off and cook five more minutes (getting rid of some of the extra moisture).  Add the teaspoon of salt and stir.  Add 1/4 cup of balsamic vinegar and stir.  Add three packed tablespoons of brown sugar and stir until all combined.  Take them off the heat.  Put both goat cheese into a microwave safe bowl and microwave on high for 20 seconds (just until soft and you can mix them easily with a spoon.)  Mix the goat cheese together.  Put flat breads on separate pans.  Spread each with half of the goat cheese.  Then layer the sliced figs on one, and the sliced peaches on the other.  Cover each with 1/2 of the balsamic onion mixture.  Top each flatbread with one 4 oz package of crumbled asiago (or blue cheese if you prefer).  Once covered evenly put into the oven at 350 degrees for 20 minutes or until the cheese melts.  When you take them out sprinkle about a cup of arugula over each flatbread then cut the breads into small triangles on a cutting board and serve!  SO incredibly good!!  They won’t last!
